Country-style Cooked Shoulder of Ham

Cooked shoulder of ham is made from pig shoulders cut in such a way as to keep the neck stuck to them.

Tied by hand, so as to make it look like a big ball, it is made to stand for about a week. During the last processing step, it is cooked in water and wine at low temperature for several hours.

The result is a tasty, soft, aromatic product which can be enjoyed either hot or cold.
